Savvy Meals: Chicken Fried Rice with Stir-fried Veggies

Hey “Savvy Readers!” It’s the end of a very long week and thank God it’s Friday! Now it’s time to relax and prepare for the weekend. For me that means…menu planning, grocery shopping (if necessary), washing clothes, hanging with the kiddos and finally church on Sunday. Yep! My weekend is just as busy as my week with the exception of having to get up at 5am, but I digress.

Let me be the first to say, I am not a chef but I do enjoy cooking, baking and eating! I also enjoy trying new recipes and putting my little spin on it. So today, I wanted to share with you the first (hopefully, of many) “Savvy Meals!” On Wednesday night, I prepared Chicken Fried Rice with Stir-fried Veggies and I must say that it was a success, the fam just loved it. This meal is really easy and can be prepped in advance, which is always great!

Here is what you will need:

I also used three sliced chicken breast and 3 cups of cooked white rice (which was placed in the frig until it was cold).

I then cut the fresh veggies and shredded the cabbage.

Once everything was prepped, I followed the directions on the back of the Sun-Bird stir-fry seasoning pack and set aside. Added olive oil and the chopped veggies into the wok, then I allowed them to cook a few minutes before adding the seasoning pack. Last I added the frozen broccoli and shredded cabbage. I actually like for my stir-fried veggies to be a bit more crisp but I had to allow them to cook longer due to how thick I cut my carrots.

For the fried rice I basically followed the directions on the back of the Sun-Bird Seasoning Pack. I seasoned the sliced chicken breast with salt and pepper, cooked until done and set aside. I then cooked about 3/4 of a cup the frozen peas & carrot mix. In a frying pan I added olive oil, cold white rice, Sun-Bird Seasoning pack and soy sauce. Once combined, I then pushed the seasoned rice to one side of the pan, then added the two eggs which were scrambled. Once the eggs were cooked, I mixed them with the rice and then added the chicken and peas & carrot mix. Then voila…
